Diet for a Small Planet explains how the recent grain-fed, meat-centered diet is not inevitable: It is a symptom of economic rules that concentrate wealth and impoverish billions of people who are made too poor to buy the food they need. As the better off outbid poor people in global marketplace, farmland increasingly shifts away from food crops toward the production of livestock feed, as well as raw material for fuel and processed food products. One result? In the US, for example, over 40 percent of all farmland now grows just two crops used for feed and fuel—corn and soy.
